  • 1 1/2 tablespoons unsalted butter
  • 5 cups vegan marshmallows (divided)
  • 1/2 teaspoon vanilla extract
  • 7 cups Rice Krispies cereal (divided)
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons orange food coloring (optional)
  • Whipped cream (optional topping)

Instructions

  1. Grease an 8-inch round cake pan with unsalted butter.
  2. In a saucepan over low heat, melt 1 1/2 tablespoons of butter and stir in 2 cups of vegan marshmallows until melted. Mix in the vanilla extract.
  3. Remove from heat and add 3 cups of Rice Krispies cereal, stirring until coated. Press the mixture into the prepared pan.
  4. In another saucepan, melt 2 1/2 tablespoons of butter and mix in the remaining 3 cups of vegan marshmallows until melted. Stir in pumpkin pie spice and orange food coloring.
  5. Add the remaining 4 cups of Rice Krispies cereal to this mixture, combining well before spreading over the first layer in the pan.
  6. Let cool for about 20 minutes before cutting into squares or wedges. Optionally top with whipped cream before serving.
