Ingredients

Scale
  • 1 store-bought refrigerated pie crust
  • 1 ¾ cups pumpkin puree
  • ¾ cup brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 ¾ cups whole milk

Instructions

  1. Preheat your oven to 375°F (190°C). Fit the pie crust into a 9-inch pie dish on a baking tray.
  2. In a large mixing bowl, whisk together pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, ginger, salt, and whole milk until smooth.
  3. Pour the filling into the prepared crust. Optionally cover edges with foil to prevent over-browning.
  4. Bake for about 70 minutes until mostly set with a slight jiggle in the center. Allow to cool completely on a wire rack before chilling in the fridge for at least 5 hours.
  5. Serve chilled with whipped cream or any desired toppings.
