  • 6 garlic cloves
  • 1 small yellow onion
  • 3 guajillo chiles
  • 2 pasilla chiles
  • 2 teaspoons coriander seeds
  • 1 teaspoon cumin seeds
  • 1/2 cup grapefruit or orange juice
  • 1/2 cup lime juice
  • 1 tablespoon kosher salt
  • 2 teaspoons annatto seeds or achiote paste
  • 3 pounds bone-in, skin-on chicken drumsticks and thighs

Instructions

  1. Char garlic cloves and onion in a skillet until slightly burnt, then transfer to a blender.
  2. Toast guajillo and pasilla chiles until fragrant; add to the blender.
  3. Toast coriander and cumin seeds in the skillet briefly and add to the blender with juices, salt, annatto seeds (or achiote), oregano, and paprika. Blend until smooth.
  4. Combine marinade with chicken in a bowl or bag; refrigerate for at least 3 hours (up to 12).
  5. Prepare grill for indirect heat; remove excess marinade from chicken, brush with oil, season with salt, and grill until cooked (about 25-30 minutes).
  6. Let chicken rest before serving.
