  • 100 ml strong coffee
  • 200 g savoiardi sponge fingers
  • 300 ml double cream
  • 75 g icing sugar
  • 250 g mascarpone
  • 100 g pistachio cream (plus extra for decoration)
  • Chopped pistachios (for garnish)

Instructions

  1. In a large mixing bowl, whip the double cream with icing sugar until soft peaks form. In another bowl, mix the mascarpone with pistachio cream until smooth. Gently fold the mascarpone mixture into the whipped cream.
  2. Pour strong coffee into a shallow dish and quickly dip each savoiardi finger on both sides.
  3. Layer soaked sponge fingers at the bottom of a medium-sized dish, spread some pistachio cream mixture over them. Repeat layers until all ingredients are used, finishing with pistachio cream on top.
  4. Decorate by piping additional pistachio cream over the top layer and dragging a toothpick through for a feathered effect.
  5. Cover and chill for at least 4 hours or overnight before serving. Sprinkle with chopped pistachios just before serving.
