  • 120 ml whole milk
  • 120 g powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 175°C. Grease and line a 23 cm round cake pan with parchment paper.
  2. In a mixing bowl, beat together softened butter and granulated sugar until pale and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Gently mix in the lemon zest and juice until combined.
  5. Add flour, baking powder, and salt; stir until just combined.
  6. Gradually incorporate the milk until the batter is smooth.
  7. Pour the batter into the prepared cake pan and bake for 30–35 minutes or until a skewer inserted comes out clean.
  8. While baking, whisk together powdered sugar and lemon juice for the glaze.
