  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken or vegetable broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened (5-7 minutes).
  2. Stir in minced garlic, oregano, basil, and optional red pepper flakes; cook for 1 minute.
  3. Add chicken or vegetable broth and crushed tomatoes; bring to a boil.
  4. Stir in rinsed cannellini and kidney beans; reduce heat and simmer for 15 minutes.
  5. Add ditalini pasta; cook according to package directions until al dente (8–10 minutes).
  6. Season with salt and pepper to taste before serving. Garnish with fresh parsley.
