Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrot, celery, and optional turkey strips until soft.
  2. Add minced garlic and sauté until fragrant.
  3. Pour in chicken broth, drained beans, and chopped tomatoes. Add water and bring to a boil; cook for 15 minutes.
