  • 2 lbs red potatoes, washed
  • 1 stick (1/2 cup) butter
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Place butter in a 9×13 baking pan and let it melt as the oven heats.
  2. Cut each red potato in half and lightly score the cut sides.
  3. In a mixing bowl, combine Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper.
  4. Once melted, sprinkle the seasoning mixture into the hot buttered pan.
  5. Place the potatoes cut side down in the pan over the seasoning.
  6. Spray the tops of the potatoes with nonstick cooking spray and sprinkle with the remaining herb seasoning.
  7. Bake uncovered for about 40 minutes or until tender when pierced with a fork.
