  • 2 tbsp olive oil
  • 4 1/4 cups low sodium chicken broth
  • 1/4 cup lemon juice
  • 1/2 red onion (chopped)
  • 2 ears grilled corn (cut off the cob)
  • 1 English cucumber (sliced and quartered)
  • 1 red bell pepper (chopped)
  • 1 pint cherry tomatoes (halved)
  • 15 oz can garbanzo beans (drained and rinsed)
  • 1/2 cup pitted Kalamata olives (halved)
  • 1/2 cup sliced almonds
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup feta cheese

Instructions

  1. Make the Dressing: Combine olive oil, lemon juice, vinegar, herbs, sugar, Dijon mustard, garlic powder, salt, and pepper in a small bowl or jar. Whisk or shake until well mixed. Refrigerate until ready to use.
  2. Cook the Orzo: In a large nonstick skillet over medium-low heat, melt butter and olive oil. Add orzo and chopped red onions; sauté for about 3–5 minutes until onions soften.
  3. Simmer the Mixture: Stir in chicken broth, lemon juice, salt, and pepper. Simmer for about 8–10 minutes until orzo is al dente. Drain any excess liquid and cool in the refrigerator.
  4. Combine Salad Ingredients: Once cooled, mix together the cooked orzo with all prepared salad ingredients in a large bowl. Pour in the dressing.
  5. Toss and Serve: Gently toss to combine until evenly coated. Adjust seasoning as necessary before serving.
