Enjoy this quick and delicious One Pot Creamy Cajun Sausage Pasta (30-Minutes) that’s perfect for busy weeknights.

Ingredients

Scale
  • 10 ounces smoked sausage (Andouille or kielbasa)
  • 4 ounces pasta (penne or rigatoni)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion
  • 2 cups low-sodium chicken broth (add more if needed)
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for extra spice)
  • 1 cup fresh spinach
  • Chopped parsley for garnish

Instructions

  1. Start by heating olive oil in a large pot over medium heat. Add the diced onion and bell peppers. Sauté until they are soft, about 3-5 minutes.
  2. Once your vegetables are tender, slice the smoked sausage into bite-sized pieces. Add the sausage to the pot and cook until browned, about 5-7 minutes.
  3. Pour in the chicken broth, followed by the pasta. Stir in Cajun seasoning, garlic powder, and cayenne pepper if using.
  4. Bring everything to a boil, then reduce heat and cover, letting it simmer for about 10-12 minutes. Stir occasionally until pasta is al dente.
  5. Lower heat further before adding heavy cream and Parmesan cheese. Mix well until cheese melts into a smooth sauce.
  6. If using spinach, stir in fresh spinach until wilted.
  7. Lastly, plate your delicious pasta and garnish with chopped parsley before serving.
