  • 1 1/4 cups chocolate chips
  • 3/4 cup cocoa powder
  • 1/2 tsp. salt
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 3 large eggs
  • 2 Tbsp. vegetable oil
  • 1 tsp. peppermint extract
  • 3/4 cup flour
  • 1 1/2 tsp. espresso powder (optional)
  • 1 cup chocolate chips (for ganache)
  • 1/2 cup heavy cream (for ganache)
  • 1 tsp. peppermint extract (for ganache)
  • 1 tsp. unsalted butter (for ganache)
  • pinch of salt (for ganache)
  • Peppermint Candies/Candy Canes, crushed for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8 inch baking pan by greasing it and lining it with parchment paper.
  2. In a microwave-safe bowl, melt the unsalted butter and ½ cup of chocolate chips together in 30-second increments until smooth.
  3. Stir in cocoa powder, salt, and optional espresso powder until well combined.
  4. Add granulated sugar and brown sugar, mixing thoroughly.
  5. Whisk in eggs one at a time, followed by vegetable oil and peppermint extract.
  6. Gently fold in flour and remaining chocolate chips until just combined.
  7. Pour batter into the prepared pan and bake for 35–40 minutes or until a toothpick comes out mostly clean with moist crumbs.
  8. Cool completely before preparing the ganache.
  9. For the ganache, heat heavy cream until warm, pour over chocolate chips, let sit, then stir until smooth. Mix in peppermint extract, butter, and salt.
  10. Spread ganache over cooled brownies and top with crushed peppermint candies.
  11. Chill for at least one hour before cutting into squares.
