  • 150 ml extra virgin olive oil
  • ½ tsp chilli flakes
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 30 g finely grated parmesan cheese
  • 2 tbsp balsamic vinegar
  • 6 green olives (finely chopped)
  • 6 fresh basil leaves (finely chopped)
  • Sliced warm crusty bread for serving

Instructions

  1. In a mixing bowl, combine 150 ml of extra virgin olive oil, ½ tsp chilli flakes, 1 tsp salt, ¼ tsp ground black pepper, ½ tsp dried oregano, and ½ tsp dried thyme.
  2. Mix in 30 g of finely grated parmesan cheese and drizzle in 2 tbsp of balsamic vinegar; stir until well combined.
  3. Fold in 6 finely chopped green olives and 6 fresh basil leaves until evenly distributed.
  4. Transfer the mixture to a serving bowl and enjoy immediately with warm sliced crusty bread.
