  • 1 pinch salt
  • 1 teaspoon distilled white vinegar
  • 46 tablespoons water
  • 2 tablespoons salted butter
  • 2 cups yellow onion (chopped)
  • 1½ cups carrot (diced)
  • 1 cup celery (diced)
  • 4 teaspoons garlic (minced)
  • 3 red potatoes (peeled and diced)
  • 2 12-ounce cans corned beef (crumbled)
  • 2 cups beef stock
  • 1¼ teaspoon English mustard (such as Colman's)
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons fresh parsley (finely chopped)

Instructions

  1. Prepare the pastry by combining flour and salt, then mixing in chilled butter and lard until crumbly. Stir in vinegar and water, chill for 30 minutes.
  2. For the filling, sauté onions, carrots, celery, and garlic in butter until softened. Add potatoes and corned beef, then stir in beef stock, mustard, pepper, and parsley until heated through.
  3. Preheat your oven to 375°F (190°C). Roll out half of the pastry to fit a pie dish, fill with the meat mixture, then cover with the remaining pastry. Seal edges.
  4. Cut slits in the top crust for steam release and bake for 45-60 minutes until golden brown.
