  • 1 and 1/4 cups blended old-fashioned rolled oats
  • 2 and 1/2 cups semisweet chocolate chips

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter until smooth.
  3. Add brown sugar, beating until fluffy.
  4. Mix in one egg, one egg yolk, and vanilla extract until well combined.
  5. In another bowl, whisk together flour, baking soda, baking powder, and salt; add to the wet mixture gradually.
  6. Stir in whole oats.
  7. Blend additional old-fashioned rolled oats into a coarse powder; fold into the dough.
