  • 2 C. Nut Butter (I used 1 C. Almond Butter and 1 C. Peanut Butter)
  • 1/2 C. Pure Maple Syrup (Keto Sugar Free Syrup)
  • 1/2 C. Coconut Flour
  • 1/4 C. Almond Flour
  • 2 Tbsp Pure Pumpkin Puree
  • 1 Tbsp Pumpkin Pie Spice
  • Pinch of Sea Salt

Instructions

  1. In a small saucepan over low-medium heat, combine nut butter and maple syrup until smooth. Turn heat to low.
  2. Add coconut flour, almond flour, pumpkin puree, pumpkin pie spice, and sea salt to the saucepan. Mix thoroughly with a spatula until well combined; the mixture should be thick.
  3. Line a baking sheet with parchment paper or silicone mat. Roll tablespoonfuls of the mixture into balls and place on the sheet.
  4. Flatten each cookie to about 1/2 inch thick using a fork. Refrigerate for at least one hour until set.
