  • 4 chicken thighs
  • 1 cup long-grain rice (basmati or jasmine)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14 oz), drained
  • 1 cup carrots, diced
  • 1/2 cup dried apricots, chopped
  • 1/4 cup almonds, slivered
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and half of the spices.
  2. Heat olive oil in a large pot over medium heat.
  3. Brown the chicken on both sides for about 5-6 minutes each; set aside.
  4. In the same pot, sauté onions until translucent; add garlic and cook for another minute.
  5. Stir in diced carrots with the remaining spices and cook for 2-3 minutes.
  6. Add rice, drained tomatoes, and dried apricots; mix well.
  7. Pour in chicken broth and bring to a gentle boil.
  8. Return browned chicken to the pot; cover and simmer for 30-35 minutes until rice is tender.
  9. Sprinkle slivered almonds during the last 5 minutes of cooking.
  10. Fluff rice before serving and enjoy!
