  • 2 ready-rolled shortcrust pastry
  • 3 large eggs
  • 1 cup milk
  • 1 cup mushrooms
  • 1 onion
  • 1 cup bacon lardons
  • 1 cup grated cheddar cheese
  • 3 tbsp chopped chives
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a frying pan, cook bacon lardons until crispy, then set aside.
  3. Sauté chopped onions in the bacon fat until golden brown; set aside.
  4. Sauté quartered mushrooms in butter until golden. Add garlic and dill; stir.
  5. Roll out pastry and cut circles to fit greased muffin tin holes.
  6. Fill pastry cases with cooked bacon and onions, cheese and mushrooms, or cheese and chives.
  7. Beat eggs with milk, salt, and pepper; pour over the filling until just full.
  8. Bake for about 25 minutes or until golden brown.
