  • 16 graham crackers
  • 1/2 cup pecans (toasted)
  • 4 tbsp unsalted butter (melted)
  • 1 cup sugar
  • 1 pound cream cheese (room temperature)
  • 2 large eggs
  • 1/3 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. For the crust, crush graham crackers and pecans in a bowl. Add melted butter, sugar, and cinnamon; mix well.
  3. Press the mixture into a mini muffin pan.
  4. For the filling, beat cream cheese until smooth; gradually add salt, sugar, vanilla, eggs, and sour cream until fully combined.
  5. Pour filling over crusts in muffin cups until three-quarters full.
  6. Bake for about 18 minutes until set but slightly wobbly in the center.
  7. Allow cooling at room temperature before refrigerating for at least two hours.
