  • 1 lb boneless skinless chicken breast (cut into 1-inch chunks)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (plus zest for more lemon flavor)
  • 2 garlic cloves, minced
  • 2 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 whole wheat pitas (thin)
  • 1 cup Persian cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 2 tbsp parsley, chopped (or mint, basil, dill, etc.)
  • 1/2 cup feta cheese, crumbled
  • 1 lemon, juice
  • Salt and pepper to taste
  • 1/2 cup tzatziki

Instructions

  1. Marinate the chicken: In a non-reactive bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken pieces and marinate for at least 15 minutes.
  2. Prepare the salsa: Combine chopped cucumbers, cherry tomatoes, red bell pepper, red onion, parsley or herbs of choice, feta cheese, lemon juice, salt, and pepper in a bowl.
  3. Cook the chicken: Heat a large skillet over medium-high heat. Cook marinated chicken until golden brown and fully cooked through (about 6-9 minutes total).
  4. Warm the pitas: Use a griddle to soften pitas for easier filling.
  5. Assemble tacos: Fill each pita with chicken, top with salsa and a dollop of tzatziki.
