- 6 ounces prepared mincemeat (scant 3/4 cup)
- 3/4 cup dried currants
- 1 large egg
- 1/3 cup + 1 tablespoon finely granulated sugar
- 1/3 cup butter at room temperature
- 1 cup – 1 tablespoon self-raising flour
- Preheat your oven to 160°C / 325°F / Gas 3.
- Line a muffin tin with 12 cases.
- In a mixing bowl, combine all ingredients and mix until smooth for about 2 minutes.
- Spoon the mixture into each muffin case until about three-quarters full.
- Bake for 25–30 minutes until golden and springy when touched.
- Cool on a wire rack before serving.
