  • 6 ounces prepared mincemeat (scant 3/4 cup)
  • 3/4 cup dried currants
  • 1 large egg
  • 1/3 cup + 1 tablespoon finely granulated sugar
  • 1/3 cup butter at room temperature
  • 1 cup – 1 tablespoon self-raising flour

Instructions

  1. Preheat your oven to 160°C / 325°F / Gas 3.
  2. Line a muffin tin with 12 cases.
  3. In a mixing bowl, combine all ingredients and mix until smooth for about 2 minutes.
  4. Spoon the mixture into each muffin case until about three-quarters full.
  5. Bake for 25–30 minutes until golden and springy when touched.
  6. Cool on a wire rack before serving.
