  • 225g butter, softened
  • 225g light muscovado sugar
  • 300g self-raising flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 4 large eggs
  • 1 tbsp milk
  • 550g Bramley apples
  • Juice of ½ lemon
  • Icing sugar, for dusting

Instructions

  1. Preheat your oven to 180°C (160°C fan). Grease and line a 30cm x 23cm baking tin.
  2. Peel, core, and slice the Bramley apples, tossing them in lemon juice.
  3. In a mixing bowl, combine softened butter, light muscovado sugar, self-raising flour, baking powder, half of the ground cinnamon, eggs, and milk. Beat until smooth.
  4. Spread half the batter in the tin, layer with half the apple slices and sprinkle with remaining cinnamon. Add the rest of the batter and top with more apple slices.
  5. Bake for 40-50 minutes until a skewer comes out clean.
  6. Allow cooling for 10 minutes before transferring to a wire rack and dusting with icing sugar.
