  • 3 boneless skinless chicken thighs
  • 12 oz gluten-free farfalle pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese
  • 1/4 cup diced sun-dried tomatoes
  • Fresh basil for garnish

Instructions

  1. Cook the farfalle pasta in salted boiling water until al dente, then drain and set aside.
  2. In a skillet over medium heat, add sun-dried tomato oil and sear seasoned chicken thighs until golden brown on both sides. Remove and set aside.
  3. In the same skillet, melt butter and sauté shallots, garlic, and onion until fragrant. Stir in gluten-free flour.
  4. Gradually add chicken broth while stirring to avoid lumps. Mix in heavy cream, parmesan cheese, sun-dried tomatoes, spinach, seasoning, and salt until smooth.
  5. Slice the chicken and return it to the skillet along with the pasta. Toss everything together and simmer for about 5 minutes.
  6. Garnish with chopped basil before serving hot.
