  • 15 oz canned chickpeas
  • 12 oz chopped tomatoes
  • 56 oz seedless English cucumber
  • 1/2 cup diced red onion
  • 3/4 cup quality olive oil
  • 2 TBSP red apple vinegar or white apple vinegar
  • 2 TBSP balsamic vinegar
  • 1 large lemon (juiced)
  • 1 clove garlic (smashed and minced, optional)
  • 12 tsp Italian seasoning blend
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 34 TBSP fresh chopped parsley (to garnish)
  • 1/41/2 cup crumbled feta cheese (skip if vegan)

Instructions

  1. In a large bowl, whisk together olive oil, both types of vinegar, lemon juice, garlic (if using), Italian seasoning, salt, and pepper to create the marinade.
  2. Add drained chickpeas, chopped tomatoes, cucumber slices, diced red onion, and parsley to the marinade. Stir gently to combine all ingredients.
  3. Allow the salad to marinate at room temperature for 30-60 minutes to enhance flavors.
  4. Serve chilled or at room temperature. Optionally sprinkle feta cheese on top before enjoying.
