  • 4 boneless skinless chicken breasts
  • 2 medium Honeycrisp apples (or Fuji)
  • 8 ounces Brie cheese
  • 1 cup apple cider or juice
  • 1/2 cup pure maple syrup
  • 2 cloves minced garlic
  • 1 tablespoon Dijon mustard
  • Fresh thyme
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, core and chop the apples and slice the Brie into thin sections. Mix them together.
  3. Season each chicken breast with Kosher salt and black pepper.
  4. Cut a pocket in each chicken breast and fill it with the apple-Brie mixture.
  5. In another bowl, whisk together apple cider or juice, maple syrup, minced garlic, Dijon mustard, thyme, and additional salt.
  6. Place the stuffed chicken in a baking dish and pour half of the glaze over them.
  7. Bake for about 30 minutes until cooked through, then drizzle with remaining glaze before serving.
