  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 carrots, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups dry apple vinegar
  • 2 cups low-sodium beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh rosemary, chopped (or 1 tsp dried)
  • 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season lamb shanks with salt and pepper, then sear until browned on all sides (about 8-10 minutes). Remove and set aside.
  2. In the same pot, sauté onion, carrots, celery, and garlic until softened (about 5 minutes). Stir in tomato paste.
  3. Deglaze with apple vinegar, scraping any browned bits from the pot. Simmer for a minute before adding beef stock.
  4. Return lamb shanks to the pot along with Worcestershire sauce, rosemary, thyme, bay leaves, salt, and pepper. Bring to a gentle boil and reduce heat to low.
  5. Cover and simmer for 2-3 hours or until fork-tender. If desired, stir in flour during the last 30 minutes to thicken gravy.
  6. Remove bay leaves before serving warm with your favorite sides.
