  • 1 cup cold milk
  • 2 large eggs
  • 2 tablespoons canola oil
  • 1 cup all-purpose flour
  • Pinch of salt
  • 2 tablespoons sugar
  • 8 oz. ricotta cheese
  • Zest of 1 lemon
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk
  • Powdered sugar (optional)

Instructions

  1. In a blender, combine milk, eggs, oil, flour, salt, and sugar. Blend until smooth.
  2. Refrigerate the batter for 1-2 hours or strain if you prefer immediate use.
  3. Heat a non-stick skillet over medium-high heat and lightly coat with oil.
  4. Pour a small amount of batter into the pan, swirling to spread evenly.
  5. Cook until golden brown (about 20 seconds), then flip and cook the other side for another 15 seconds.
  6. In a food processor, blend ricotta cheese, lemon zest, sugar, vanilla extract, and milk until smooth.
  7. Fill each warm crepe with the lemon ricotta mixture, roll or fold as desired.
