Lemon Herb Roasted Potatoes are an irresistible side dish that brings a burst of flavor to your table. These tender baby potatoes are infused with the zesty brightness of lemon and the aromatic notes of fresh herbs, making them a perfect complement to any meal.

  • 1/4 cup olive oil
  • 2 tablespoons butter (melted)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian parsley (chopped)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • Salt and black pepper

Instructions

  1. Preheat your oven to 350°F (176°C). Slice slits in the baby potatoes without cutting all the way through.
  2. In a mixing bowl, combine olive oil, melted butter, minced garlic, chopped parsley, lemon juice, honey, salt, and black pepper until well blended.
  3. Arrange potatoes in a roasting pan and coat generously with the oil mixture using a basting brush. Reserve some for basting later.
  4. Roast for about one hour, basting every 30 minutes until golden brown and tender.
