  • 2 chicken breasts (cubed)
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • Zest and juice of 1 lemon
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Slice the chicken into cubes and prepare the remaining ingredients.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, cooking until golden brown (~5–7 minutes). Remove from skillet.
  3. In the same skillet, sauté minced garlic for about 30 seconds, then add the halved cherry tomatoes and cook for an additional 2 minutes.
  4. Pour in the chicken broth and bring to a simmer. Lower heat before adding cream, lemon zest, and juice.
  5. Add gnocchi to the sauce and cook for 3–4 minutes until tender; stir in spinach just before serving.
  6. Return cooked chicken to the skillet, season to taste, and garnish with fresh herbs.
