  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 1 tablespoon milk (optional)
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until fluffy. Stir in rolled oats and flour until combined. Press into a greased 9×9-inch baking pan.
  3. Bake the crust for 15 minutes or until golden brown. Let cool slightly.
  4. In another bowl, whisk eggs, honey, lemon zest, lemon juice, and flour until smooth. Pour over the baked crust.
  5. Bake for an additional 20-25 minutes until set with a slight jiggle in the center.
  6. Cool completely before slicing into squares.
