  • 1 1/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 tsp corn starch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • Optional: 1 tsp vanilla extract
  • 2 cups chocolate chips (milk or semi-sweet)

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, whisk together all-purpose flour, cake flour, baking soda, baking powder, cornstarch, and salt.
  2. In a stand mixer with a paddle attachment, cream the cold cubed butter until smooth. Gradually add brown sugar and white sugar until fluffy.
  3. Add the egg and egg yolk (and vanilla if using) while mixing on low speed until fully combined.
  4. Slowly incorporate the dry flour mixture into the wet ingredients until just combined.
  5. Gently fold in the chocolate chips.
  6. Measure out six cookies weighing approximately 5.7 oz each onto a lined baking sheet without flattening them.
  7. Bake for about 10-12 minutes or until golden brown on top; they should still be soft in the center.
  8. Cool on the baking sheet for 15-30 minutes before transferring to a cooling rack.
