  • 3/4 cup fresh key lime juice
  • 1/2 cup + 2 tablespoons pure maple syrup
  • 1 cup full-fat canned coconut milk
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon sea salt
  • 2 Tbsp coconut oil (melted and cooled)

Instructions

  1. Freeze the ice cream maker bowl overnight.
  2. In a blender, combine avocados, key lime juice, maple syrup, coconut milk, sea salt, vanilla extract, and melted coconut oil until smooth.
  3. Pour the mixture into the chilled ice cream maker and churn according to the manufacturer’s instructions until thick.
  4. Serve immediately for soft serve or transfer to a freezer-safe container and freeze for about 2 hours for firmer ice cream.
  5. Before serving, thaw for 5-10 minutes for easier scooping.
