  • 2 pounds chicken pieces
  • 1 habanero chile
  • 1 bunch scallions
  • 2 cloves garlic
  • 1.5 teaspoons dried thyme
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Rinse chicken pieces under cold water and pat dry.
  2. In a food processor, blend habanero, scallions, garlic, thyme, brown sugar, allspice, soy sauce, lime juice, vegetable oil, salt, and pepper until smooth.
  3. Place chicken in a large sealable plastic bag and pour marinade over it. Seal tightly and refrigerate overnight.
  4. Preheat grill; brush with oil to prevent sticking. Grill chicken for about 20 minutes until golden brown and cooked through (internal temperature should reach 165°F).
