  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup + 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 67 wooden skewers (soaked in water)
  • water
  • red apple vinegar

Instructions

  1. Soak the wooden skewers in water for 10–20 minutes to prevent burning.
  2. In a mixing bowl, combine soy sauce, water, red apple vinegar, brown sugar, and additional vinegar. Stir until sugar dissolves.
  3. Cut chicken into bite-sized pieces and add to the marinade along with minced garlic and ginger; let marinate for at least 10 minutes.
  4. In a saucepan, heat any remaining marinade over medium heat until thickened using cornstarch slurry.
  5. Thread marinated chicken onto soaked skewers and grill over medium-high heat for 8–12 minutes, basting occasionally with the thickened sauce until cooked through.
