  • 1 pound Italian sausage (beef, turkey, or chicken)
  • 4 tablespoons olive oil
  • 1 large onion (chopped)
  • 2 large carrots (chopped)
  • 3 stalks celery (chopped)
  • 1 large red bell pepper (chopped)
  • 1 large green bell pepper (chopped)
  • 2 medium zucchini (sliced)
  • 6 cloves garlic (minced)
  • ½ cup dry apple vinegar
  • 6 cups chicken broth
  • 2 cans tomato sauce
  • 1 can diced fire-roasted tomatoes
  • 2 tablespoons dried Italian seasoning
  • 1½ cups small pasta

Instructions

  1. In a Dutch oven over medium heat, brown the sausage until no longer pink; drain and set aside.
  2. In the same pot, sauté chopped onions in olive oil until softened.
  3. Add chopped carrots and celery; cook until tender.
  4. Stir in bell peppers and zucchini; continue cooking until all vegetables are tender.
  5. Mix in minced garlic and apple vinegar; bring to a boil.
  6. Add chicken broth, tomato sauce, diced tomatoes, Italian seasoning, and red pepper flakes; return sausage to the pot.
  7. Bring back to a boil then reduce heat and simmer uncovered for about 10 minutes.
  8. Stir in small pasta; cook for another 10 minutes until pasta is done.
  9. Finish with fresh parsley and season with salt and pepper.
