  • 8 oz jar oil-packed sun-dried tomatoes (chopped)
  • 1 large onion (diced)
  • 3 large carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 pound shelf-stable gnocchi
  • 2 cups cooked chicken (shredded)
  • 1 can evaporated milk
  • Spinach for garnish
  • Grated parmesan cheese for serving

Instructions

  1. In a large pot over medium heat, heat 2 tbsp of sun-dried tomato oil. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Stir in sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper; sauté for another minute.
  3. Add tomato paste, chicken base, and flour; cook while stirring for 1 minute.
  4. Pour in chicken broth and scrape any browned bits from the pot; stir until combined.
  5. Bring to a simmer and partially cover; reduce heat to low and simmer for 15 minutes.
  6. Add shredded chicken, spinach, evaporated milk, and gnocchi; cook over medium-low heat for an additional 5–10 minutes until heated through.
  7. Serve immediately topped with grated parmesan cheese.
