  • 1 cup oil-packed sun-dried tomatoes, chopped

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season the chicken breasts with salt and pepper. Place them in the baking dish and bake for 25-30 minutes until cooked through (internal temperature of 165°F/75°C). Let rest before slicing.

  4. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
