  • 4 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 2 green onions, finely chopped
  • 2 tablespoons fresh dill (or 1 tablespoon dried dill)
  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine chopped spinach (squeeze out excess moisture), feta cheese, ricotta cheese, green onions, and dill. Mix until well combined.
  3. Lay out two sheets of phyllo pastry on a clean surface and lightly brush with olive oil. Cut into squares or circles.
  4. Place one tablespoon of the filling in the center of each piece of phyllo.
  5. Fold the pastry over the filling to create triangles or pockets, sealing tightly.
  6. Arrange on a baking tray lined with parchment paper and brush tops with olive oil.
  7. Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
