  • 1 cup crisp apples (Granny Smith or Honeycrisp), sliced
  • 4 oz goat cheese, crumbled
  • 4 cups mixed greens (arugula or spinach)
  • 1/2 cup walnuts, coarsely chopped and toasted
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 425°F (220°C). Wrap each cleaned beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender.
  2. While the beets roast, slice the apples into thin wedges.
  3. In a skillet over medium heat, toast the walnuts for about 5 minutes until golden brown.
  4. Once cooled, peel the beets and cut them into bite-sized cubes. In a large bowl, combine mixed greens, apple slices, beet cubes, toasted walnuts, and crumbled goat cheese.
  5. In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over the salad just before serving.
