  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 can (8 oz) crushed pineapple in juice, drained
  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • ½ cup unsalted butter, melted
  • ½ cup unsalted butter, softened for frosting
  • 2 cups powdered sugar for frosting
  • 1 tsp vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a rectangular baking dish.
  2. In a large bowl, mix flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, stir together the crushed pineapple and diced apples. Add this mixture to the dry ingredients along with melted butter. Mix gently until just combined.
  4. Pour the batter into the prepared dish and spread evenly. Bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
  5. While cooling, prepare the frosting by beating softened butter until creamy. Gradually add powdered sugar and vanilla extract while mixing until smooth.
  6. Once cooled completely, frost the cake generously and serve.
