  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup hot honey
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lemon juice
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken dry and season with salt and pepper.
  2. In a bowl, whisk together hot honey, soy sauce, lemon juice, and minced garlic.
  3. Marinate the chicken in half of the sauce for at least 30 minutes.
  4. Place marinated chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes until cooked through (165°F internal temperature).
  5. While the chicken cooks, heat olive oil in a skillet over medium heat. Sauté bell peppers and broccoli until tender (about 5 minutes).
  6. Once cooked, slice the chicken and assemble bowls with rice, sautéed vegetables, sliced chicken, and drizzle remaining sauce on top.
