  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 oz spaghetti noodles
  • 8 oz cream cheese
  • 1 cup low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking

Instructions

  1. Slice chicken breasts into bite-sized pieces. Heat olive oil in a large pan over medium heat. Add chicken, season with salt and pepper, and cook until golden brown (about 6-8 minutes). Remove from pan and set aside.
  2. In a large pot, bring salted water to a boil and cook spaghetti noodles according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In the same pan used for chicken, sauté minced garlic until fragrant (about 1 minute). Stir in diced tomatoes and Italian seasoning; simmer for about 5 minutes.
  4. Mix in cream cheese and chicken broth until smooth. If too thick, gradually add reserved pasta water to desired consistency. Return cooked chicken and drained spaghetti to the pan; toss until well-coated.
  5. Serve hot, garnished with fresh herbs or grated cheese if desired.
