Ingredients

Scale
  • 8 oz fettuccine or spaghetti
  • 2 cups sliced cremini or shiitake mushrooms
  • 6 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup grated fresh Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to boil. Add pasta and cook until al dente, reserving 1/2 cup of pasta water before draining.
  2. Sauté the mushrooms: In a skillet over medium heat, melt 3 tablespoons of butter. Add mushrooms and sauté for 5-7 minutes until golden brown.
  3. Make brown butter: Push mushrooms aside, add remaining butter, and cook until it turns golden brown and fragrant.
  4. Add garlic: Stir in minced garlic with the butter and mushrooms, cooking for an additional minute.
  5. Combine: Toss drained pasta with the mushroom-butter mixture, adding reserved pasta water gradually until creamy.
  6. Finish and serve: Mix in Parmesan cheese, season with salt and pepper, garnish with parsley, and serve hot.
