Breakfast Taco Casserole is a vibrant and flavorful dish that elevates your morning routine. This easy-to-make casserole combines layers of ground beef or turkey, eggs, tortilla chips, black beans, and colorful vegetables. Topped with melted cheese and fresh cilantro, it’s an irresistible breakfast that’s perfect for gatherings or busy weekdays.

  • 1 lb ground beef or turkey
  • 6 large eggs
  • 2 cups tortilla chips
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 2 medium tomatoes, chopped
  • 1 packet taco seasoning
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the ground meat until cooked through. Drain excess fat and stir in taco seasoning with about ½ cup water; simmer until thickened.
  3. In a bowl, whisk the eggs with a pinch of salt and pepper until frothy.
  4. Layer half of the tortilla chips in the prepared dish, followed by half of the black beans, meat mixture, tomatoes, and cheese. Pour half of the egg mixture over the top. Repeat layers with remaining ingredients, finishing with the rest of the egg mixture.
  5. Bake for 25-30 minutes until set in the center and golden on top. Allow to cool slightly before slicing.
