  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp espresso powder
  • 1 cup sour cream
  • 1 tsp agar-agar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar; then stir in sour cream and vanilla until blended.
  3. Dissolve espresso powder in hot water; mix into the cream cheese mixture until well incorporated.
  4. Dissolve agar-agar in water according to package instructions; slowly mix into the filling while stirring continuously.
  5. Pour filling over crust and bake for 50-60 minutes until set around edges but slightly wobbly in center.
  6. Cool completely before refrigerating for at least four hours or overnight. Serve chilled with optional toppings.
