  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened (2 blocks)
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • Zest of 1 large orange
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp agar-agar (gelatin alternative)
  • Dark chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C). Mix crushed chocolate cookies with melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes until slightly firm.
  2. In another bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add sugar, then mix in sour cream, vanilla extract, cocoa powder, and orange zest until silky smooth.
  3. Dissolve agar-agar in three tablespoons of water over low heat for about five minutes, then mix into the cream cheese mixture.
  4. Pour the filling over the baked crust and smooth the top to eliminate air bubbles.
  5. Chill in the refrigerator for at least four hours or overnight before serving.
  6. Carefully release from the springform pan and garnish with dark chocolate shavings.
