  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of 1 lime
  • 1 clove garlic, minced
  • tsp cumin
  • tsp smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado, diced
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup canned black beans, rinsed
  • 1 cup corn (canned, fresh, or thawed if frozen)
  • 2 tbsp chopped cilantro
  • 1 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • tsp chipotle or smoked paprika
  • Salt, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped chicken and cook until browned (about 8-10 minutes). Stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper.
  2. In a small bowl, mix together sour cream (or Greek yogurt), lime juice, chipotle (or smoked paprika), and salt to create the sauce.
  3. Lay out lettuce leaves on a serving platter. Fill each leaf with cooked chicken and top with avocado, black beans, corn, red onion, and cilantro.
  4. Drizzle the chipotle-lime sauce over each lettuce cup before serving.
