  • 1 pound of carrots, peeled and cut into sticks or rounds
  • 2 tablespoons of olive oil
  • 2 tablespoons of honey
  • 2 tablespoons of balsamic vinegar
  • 1/4 cup chopped pistachios
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and drizzle it with olive oil.
  2. In a mixing bowl, combine the carrots, olive oil, balsamic vinegar, honey, half of the pistachios, and sesame seeds. Toss to coat evenly.
