  • 1/2 teaspoon salt
  • 1 pound orzo pasta
  • 1/2 pound kalamata olives, pitted and chopped
  • 1/2 cup chopped red onion
  • 12 ounces sun-dried tomatoes in oil, drained and diced
  • 1 cup spinach, sliced thin
  • 3 tablespoons fresh basil, thinly cut
  • 3 tablespoons fresh mint, thin strips
  • 1/2 teaspoon black pepper
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • Zest from 1 lemon, grated
  • 1/3 pound feta cheese, crumbled

Instructions

  1. Boil water in a large pot; add salt and orzo pasta. Cook until al dente according to package instructions.
  2. Drain the orzo in a colander and rinse under cold water to cool.
  3. In a mixing bowl, combine olives, red onion, sun-dried tomatoes, spinach, basil, mint, and black pepper.
  4. In another bowl, whisk together olive oil, lemon juice, lemon zest, and crumbled feta.
  5. Add cooled orzo to the vegetable mixture; pour dressing over it. Toss well to combine.
  6. Serve immediately or refrigerate for at least one hour for enhanced flavors.
