  • 1 1/2 cups heavy cream
  • 1/2 cup (1 stick) butter
  • 5 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1/3 cup grated parmesan cheese
  • 1 tsp cornstarch
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan over low heat, melt butter and sauté garlic until fragrant. Stir in heavy cream and cornstarch; cook until combined. Add thyme, salt, and pepper.
  3. In a greased baking dish, layer half the sweet potatoes, drizzle half the garlic butter mixture over them. Repeat layers.

  5. Remove foil and bake for an additional 10-15 minutes until golden brown.
