  • 2 cups heavy cream
  • 1 cup unsweetened cocoa powder
  • 2 ounces semi-sweet chocolate (finely chopped)
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 5 large egg yolks

Instructions

  1. In a large saucepan, whisk together whole milk, heavy cream, and cocoa powder. Simmer over medium-low heat; turn off the heat and stir in chocolate and vanilla until melted.
  2. Add 3/4 cup sugar to the mixture; return to simmer while whisking until dissolved.
  3. In a medium bowl, whisk remaining sugar and egg yolks until light. Gradually add warm milk mixture while whisking continuously.
  4. Cook combined mixture on medium heat until thickened enough to coat the back of a spoon. Strain through a fine mesh strainer into an ice bath.
  5. Chill custard completely in the refrigerator (ideally overnight) before pouring into an ice cream maker.
  6. Freeze according to manufacturer’s instructions until soft-serve consistency is achieved.
